Food Regulations
Shirley Vargas, of the Indiana State Department of Health, brings it all together in Rules and Regulations for Food Operations

What local, state, and federal regulations apply to your product and process? In Indiana, the Department of Health regulates food operations, and they should be contacted early in the process of setting up your food business. There are various permits and registrations required for establishing a food business. Most value-added entrepreneurial food businesses will be regulated under the wholesale foods category. The federal agency, FDA, is involved whenever a product is sold across state lines.
