Research
Alternative sweeteners: Investigating the theoretical parameters contributing to molecular sweeteness including atomic composition, configuration, conformation, dipole moment, and hydrophile-lipophile balance. Design and synthesis of sweeteners based on simple carbohydrate (or other) molecules that show enhanced sweetness. Sensory analysis of these improved sucrose substitutes.
Fat substitutes: Investigation of carbohydrate polymers or oligomers for their potential use as partial or total fat replacers in a variety of model food systems. Chemical modification of natural hydrophilic carbohydrate polymers or oligomers to alter their fat-like qualities. Investigation of structure-function relationships within and between families of carbohydrate-based fat mimetics.
